It’s sad to say that the majority of fish caught around the British coast line is exported to Europe & beyond. Why is this? The misconception that fish is difficult to prepare and cook is partly to blame & then there’s the issue of small bones!
Using the very latest restaurant techniques, one of our Michelin-starred chefs will demonstrate how easy it really can be to source, prepare, cook and present fish and shellfish native to the British coast and beyond.
Your day will be spent learning the insider’s knowledge, tips and tricks, with plenty of hands on experience; in fact totally hands on, filleting, skinning, cooking and finishing dishes. What is the best way to prepare Lobster? How do you fillet a Sole? Can you easily set up a Salmon smoker at home? How can you tell a Scallop is fresh & how do you open one? All these and many more items are covered in what will be a fun filled & very fishy day.
The emphasis is on learning sound fish preparation techniques and innovative presentation ideas before cooking your own lunch and dining in our beautiful country style dining room with service and wine close at hand.
Although you won’t actually need to bring a sou’wester or rubber boots, by the end of your day not only will you have a firm theoretical and technical knowledge but also an understanding of complimentary foods to make exciting and flavour packed dishes.
