Let’s admit it, most of us have a passion for chocolate, yet no one’s enthusiasm quite matches that of the award winning, master chocolatier, Bill McCarrick.  If Michelin stars could be awarded to a chocolatier bill would have more than one! Previously responsible for Harrods' entire chocolate, pastry, bakery and petit fours production Bill now creates bespoke chocolates in his own studio at the celebrated Sir Hans Sloane Chocolate & Champagne House, London.

 

Studio is certainly the right word to describe Bills place of work. Creating great chocolate really is an art form appreciated by the masses understood by the few, until now that is. Most chocolate courses are run by professional manufacturers for professionals; it’s a unique club usually by invite only. This is your invite to spend time with one of the U.K’s foremost chocolate experts, time that even Michelin starred chefs would envy!

 

During your fun packed day of hands on chocolate heaven you will learn about the whole process from the plantation to the final tasting. Starting with tempering and finishing with dipping including everything in between, Bill will guide you through all the processes involved and then it’s your turn. You will be amazed, delighted and surprised at the variety of ways in which you can easily work with chocolate and can look forward to some unusual and unexpected creations not least of all your own  to take away in our custom chocolate box.

 

As part of the course you will also taste a range of chocolates from around the world gaining an understanding of terroir much like wine which is why Bill with the aid of our Head Sommelier Stephen Nisbet has selected a range of wines to accompany the chocolate tasting introducing you to a skill virtually unknown outside the top restaurant scene.
